Roasted Vegetables

Ingredients

100g mushrooms
2 courgettes
1 packet of cherry tomatoes
1 red pepper
1 yellow pepper
1 red onion
1 clove of garlic (optional)
1 tbsp coconut oil

Method

1. Slice and dice all vegetables

2. Mince the garlic

3. Add all the ingredients to a wide
bottomed baking tray and mix really
well

4. Cook in the oven at 200* for 20-25
minutes
